#tastytuesday: Election addition

Sautéed Shrimp with Steamed Rice and Asparagus

Be it that some of us might be out late doing a bit of voting. SoulBoricua wanted to send out a quick 15 minute, healthy delicious meal.

1 lb Shrimp

Steamed Rice

1/2 lb Asparagus

2 T Soulfrito

1/3 Cup Onions sliced

1 Red pepper large dice

1 Green pepper large dice

1 T Garlic Butter

Begin cooking rice (tip:cooking rice in stock or broth adds another layer of flavor)...this allows rice and shrimp to be ready at the same time. Begin heating butter add shrimp that has been tossed in the Soulfrito. Add onions and cook until onions are translucent. Add pepper and onions. Sprinkle a bit a of salt and pepper to taste. Place asparagus in pot of boiling water, for 2 minutes or until the asparagus pops a bright green in color. Remove and toss in pan with shrimp mixture. Serve with rice (want additional flavor stir in Soulfrito into rice).
